Belizean Fisherman Fish Recipe

Your first real taste of Belize Adventure begins with your first meal at Caves Branch. For those who have already experienced the delicious meals, here is a little something to remind you of your time in Belize and the great fresh foods that made your vacation so perfect. 
 
Enjoy a sample of Belize – from our kitchen to yours!
 
Ingredients:
1 fresh snapper (approximately 1lb)
1 teaspoon butter
1 large tomato sliced
1 large onion sliced
1 large green pepper sliced
A handful of cilantro chopped 
2 limes
A splash of Brandy
Salt & pepper to taste
Plantain leaves
 
Method:
Clean and wash fish with lime
Slice open, then score the top of the fish
Season with butter, Brandy, salt and pepper then add veggies and wrap all in the plantain leaves and covered with foil
Grill the fish for 15 minutes at 350oF
 
Serve with sides of white rice and parsley with buttered sautéed veggies.
